Monte Brisas Danto is a standout microlot from Zarcero in Costa Rica’s West Valley, cultivated by María Elena Castro and her son Luis Salazar. Their farm, situated at elevations between 1,500 and 1,750 meters above sea level, utilizes a white honey process - a meticulous method that removes most of the mucilage but retains a thin layer, enhancing sweetness while maintaining clarity.
